Disney Movie Night: Coco

Since quarantine, we've been celebrating Taco Tuesday every week! I'm trying to throw in some fun wherever I can! :D You can make DELICIOUS tacos at home! I'm talking like so good you'll stop going out for tacos as much good. We've done it several different ways. I usually like to use ground turkey or chicken but occasionally we will do steak or ground beef. If you choose to do steak use fajita seasoning instead of taco!


For our Coco movie night, we made street tacos, homemade guacamole, and virgin Pina Coladas since it's Spring Break!! We had the Pina Coladas a little after dinner, like a dessert. It was so much fun!! If you do this with your friends/family, please tag me on Insta! I would LOVE to see it! 😄


*Tacos

If you get someone to help you or multitask, this dinner takes no time at all!

serves 3-4


  • 2 lbs of ground chicken, turkey or beef

  • 1 package of taco seasoning (Trader Joe's is my fave, I also look for low sodium)

  • 1 can of no or low sodium black beans

1/2 tsp cumin

1/4 tsp oregano

ground black pepper

  • 1 can of sweet no sodium added corn

oil

ground black pepper

  • 1 package of corn tortillas. (or whatever is your fave)


1. Heat up the oven to 350 degrees. Start by browning the meat and preparing according to the instructions on your taco seasoning packet. Meanwhile, start the beans by opening the can and dumping them, juice and all, into a small saucepan set on medium-low heat. Add in a little bit of pepper, 1/2 tsp of cumin, and 1/4 tsp of oregano. Let cook until warmed through. You don't want it to start boiling, so lower the heat if needed. Once it's done turn off the heat, set it aside with a lid to keep warm.


2. To make the corn, heat up a cast-iron skillet with a drizzle of oil on medium-high heat. (You want the pan hot so some of the corn gets burn marks!) Once the skillet is hot add in your drained can of corn and cook, stirring occasionally for several minutes until there is slight charring on the corn. Season with some pepper, turn off the heat and set aside.


3. Line the tortillas on a baking sheet in a single layer and put them in the oven for about 3 minutes or so just to heat them up!


4. Set up your toppings and start assembling your tacos!



*Toppings:

  • 1 package Angel hair cabbage

  • Limes

  • The roasted corn

  • The black beans

  • 1 package of cotija cheese (it looks like grated parmesan. We found it at Walmart in the refrigerated section)

  • Your fave salsa (my fave is from Walmart- Great Value Black bean & corn salsa)

  • Homemade guacamole (recipe below!!)

  • Sometimes I like to use plain Greek yogurt as a healthy alternative to sour cream



*My FAVE guacamole recipe

  • 3 ripe avocados

  • juice from 1 1/2 limes (FRESH! No fake stuff here! It won't be the same)

  • 1/4 cup of finely chopped fresh cilantro

  • 1 small jalapeno de-seeded and finely chopped (this makes it so it's not spicy at all!)

  • 1 tsp garlic powder

  • 1/2 tsp onion powder

  • salt and pepper to taste


Mash 3 avocados in a medium-sized bowl, squeeze in the lime juice, add your garlic and onion powder, cilantro, salt, and pepper. Mix everything well. Grab a chip and taste it. Add more of each ingredient until it's to your liking!


For some extra fun, make your own virgin Pina Coladas! These are sooo delicious! Over the years I've perfected the recipe! 😄🥥🍍


* Virgin Pina Coladas

1 tsp rum extract

1 1/2 cups of ice

2 cups of pineapple juice

1/2 cup of cream of coconut (find it in the alcohol aisle or make your own!)


Blend everything in a blender! Taste and add more of each ingredient to your liking! Pour into glasses and enjoy! Add an umbrella for extra points! 😍


*Homemade Cream of Coconut

1 can of coconut milk

1 3/4 cups sugar


Add 1 can of coconut milk and 1 3/4 cups of sugar in a saucepan on medium heat. Stir until sugar is dissolved. Transfer to a bowl and put it in the fridge to chill. Use in the Pina Colada recipe above! :D
