Hello from Hawaii! Well, we aren't officially there yet. I'm typing this up on the 12 hour flight over. We will be there when you are reading this. We are going for our babymoon before baby boy gets here. I'm so excited and glad that we decided to take some time off and explore. It's been so long since we've gone anywhere and taken some time off- especially the hubby!
This is one of my go to make ahead healthy breakfasts. I've been making it for several years and It's super easy to prep and be ready to go in the morning when you are running out the door or just need a quick breakfast. It's packed with protein, and low in sugar! I added all the ingredients into the MyFitnessPal app & it has 28g of protein & only 12.5g of sugar! đđŒ
Another thing I love is that it's super easy to switch up the flavors! I've made this with lemon and blueberries before and it's super yummy! I just added in a squeeze of lemon juice to the oats and then topped it with frozen wild blueberries (my preference). You could obviously use fresh blueberries or any other fruit you prefer. đ«đ
WAIT...I just thought of a new flavor combo!! COCONUT PINEAPPLE...YUM. okay totally making that version when we get back home. haha đđ„„đ
I started making this recipe several years ago when I was in college. I would always take it to my first morning class & the girls next to me would always ask what I was eating and talk about how yummy it smelled. It totally has a strawberry cheesecake/shortcake smell to it between the Greek yogurt, vanilla protein powder & fresh strawberries. đ€€đ°
Strawberry overnight oats

ingredients:
1/2 cup old-fashioned oats
1 scoop vanilla protein powder
3/4 cup milk (whatever kind you prefer)
1/3 cup Greek yogurt
splash of vanilla extract
1 tsp chia seeds
1 T sliced almonds
1/2 - 1 cup sliced strawberries (I like strawberries with every bite)
*optional: 1 teaspoon pure maple syrup or sweetener or choice (added in when prepping)
I used to add this in, but I find it's sweet enough without it, so I started leaving it out to cut down on the sugar.
recipe:
Mix all of your dry ingredients together in a small container that has a lid. Add in the wet ingredients and mix well. Put the lid on it and stick it in the fridge overnight. In the morning, cut up some fresh strawberries & put them on top and dig in!
That's literally it! So simple & so yummy!
**I like to meal prep and make 2-3 of these at a time!
