The Best baked donuts!

In my circle of friends, I'm know as the donut queen! 🍩👸🏻 Over on my @Healthydisneygirl page, I've shared a ton of healthy recipes! Before this blog really took off I was baking donuts and sharing pics every week on that page!

I've tried several baked donut recipes and I finally tweaked/combined a few to come up with this one and it's my all-time fave! I know you'll love it as much as I do!

If you don't have a donut pan you can still make these as muffins! I've made these as mini muffins several times!


Ingredients:

⚬ 1 1/2 cups oat flour

⚬ 1/2 cup (2 scoops) vanilla protein powder (I use a vegan one by Arbonne)

⚬ 1/4 cup coconut sugar

⚬ 1 tbs cinnamon

⚬ pinch of salt

⚬ 1 tbs baking powder

⚬ 1 cup unsweetened almond milk (or your preferred milk)

⚬ 1 flax egg (recipe below)

⚬ 1 tsp vanilla extract

⚬ 4 tbs almond butter

⚬ 2 tbs cashew butter


Glaze Recipe:

⚬ 1 1/2 cup powdered sugar

⚬ 1-2 tbs almond or coconut milk (start with 1 tbs)

⚬ 1 tsp vanilla extract

Instructions:

Preheat oven to 350.

Make the flax egg by mixing 1 tbs of ground flaxseed and 2 1/2 tbs of water in a small bowl. Let sit to thicken. (you can also just use a regular egg) Make oat flour by placing rolled oats in a blender/food processor until finely ground and set aside.

Mix all of the dry ingredients in a large bowl. Add in the wet ingredients and mix well. Let batter sit for a few minutes to let the baking powder start working. you'll notice that the batter will start to rise.

Spray your donut pan with coconut oil and spoon the batter into the pan. (I've used both a metal and silicone pans for this and both work well!) Bake for 20 min or until done. You can check with a toothpick, but you can tell they are done with they pull away from the side of the pan!

Flip them onto a wire rack and let cool completely! Once cooled you can dip them in the glaze and then let them sit for a little bit more to dry. You can also just drizzle the icing on top of them. Feel free to add some sprinkles right after you dip or drizzle them with icing to make sure the sprinkles stick!


To make the glaze:

Mix all ingredients in a shallow bowl. Start with 1 tbs of milk and add more until your desired consitency. You want the icing to be pretty thick for these!
