  • Healthy banana oat muffins

These are my go to banana muffins!! They are yummy easy to make, healthy, and the perfect breakfast or snack on the go! :) I've made this recipe so many times. It's definitely one of our faves. I've also shared it in my Instagram story a few times a while back and yall have loved it as well. It was about time I made an office post with the recipe. I can't take the credit for this recipe [e though! I got it from the blog, Cookie and Kate! healthy banana oat muffins recipe credit: Cook and Kate *I adapted the ingredients slightly* ingredients: ⅓ cup melted coconut oil ½ cup maple syrup 2 eggs, preferably at room temperature 3 mashed ripe bananas ¼ cup almond milk (or milk of choice) 1 teaspoon baking soda 1 teaspoon vanilla extract ½ teaspoon salt ½ teaspoon cinnamon 1 cup unbleached flour ¾ cup whole wheat flour * optional: you can use all white flour if you'd like* ⅓ cup old-fashioned oats, plus more for sprinkling on top 1 teaspoon turbinado sugar instructions: Preheat the oven to 325 degrees Fahrenheit (165 degrees Celsius). Prep your muffin tin with non-stick cooking spray or line with cupcake liners. In a large bowl, whisk together the melted coconut oil and maple syrup. Make sure it's cooled down a bit (so the eggs don't get cooked), add the eggs, and beat well. Mix in the mashed bananas and milk, followed by the baking soda, vanilla extract, salt, and cinnamon. Add the flour and oats to the bowl and mix just until combined. Fill the muffin tin (about two-thirds full). Sprinkle the tops of the muffins with a little bit of oats & a little bit of turbinado sugar. Bake for 22 to 25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Enjoy!! xo, Mal

Hoping that won't be the case this year. But it seems like it might be bc they never restocked some of the best sellers from the spring line this year. *I make a small commission when you shop the links in this post. thanks so much for supporting my page! ☺ Click on the pics or the pink hyperlinks below to shop the items! • easy guava & cheese pop tarts

Guava & cheese pop tarts 2 ways!! These are sooo yummy and so easy to make!! You'll be surprised at how quickly they come together & how impressive they are! made with pie crusts in the pic above. made with puff pastry sheets in the pic above. Both versions are delicious, but I think the puff pastry version is my fave! I originally made the puff pastry version for a garden tea party brunch that a friend and I hosted! They were a hit. Everyone that tried them loved them!! The puff pastry version is really more like a toaster strudel- my faveeee breakfast growing up. We were too poor to have them often, but when we did, I was in heaven! haha I was also surprised how easy these are to make! I've been wanting to make pop tarts for a while now and have been intimidated too! This recipe is SO EASY and takes hardly any time at all!! * I make a small commission when you shop the link on this post! Thanks so much for supporting my page! :) shop the ingredients guava & cheese pop tarts this recipe is adapted slightly from the How to Love Cooking Blog * watch a video of me making these here ingredients: for the filling/pop tarts: 4 oz cream cheese softened (half a block) 3 T powdered sugar 1/2 tsp vanilla extract pinch of salt 1 box of puff pastry sheets or sub 1 box of pie crusts for 2nd version 1 jar of guava dessert or package of guava paste (you won't use all of it) 1 egg wisked with a splash of water for the icing: 1/4 cup powdered sugar 1/2 tsp lime zest 1/2 T fresh lime juice pinch of salt recipe: * for pop tarts with puff pastry 1.) Set out the block of cream cheese ahead of time to soften. 2.) Preheat oven to 400 and line a baking sheet with parchment paper. 3.) Start by making the cream cheese filling. Mix together softened cream cheese, powdered sugar, vanilla extract, and a pinch of salt in a small bowl using a hand mixer (or stand mixer). Transfer to a sandwich size ziplock bag and set aside. 4.) Unfold the puff pastry sheets and layer both on top of each other (it's easier if they are thawed out for a few minutes). Cut along seams and create 9 squares. (18 in total since sheets are layered on top of each other). Put 9 of the puff pastry sheets on the lined baking sheet. 5.) Put about a spoonful or so of the guava dessert in the center of each pastry sheet, cut a hole in the tip of the sandwich bag and pipe some of the cream cheese filling on both sides of the guava (see my IG reel for a tutorial). You could also just spoon some over the guava. Put the matching puff pastry sheet on top of the fillings and use a fork to crimp and seal the edges. Wisk an egg with a splash of water and brush on top of each pastry. Bake in the oven for 12-14 min or until golden brown and done. 6.) While the pop tarts are baking, mix up the glaze. Zest your lime(s), cut the lime in half and squeeze out enough juice to have 1/2 - 1 Tablespoon. Add 1/2 tsp of lime zest, 1/2 T of the lime juice, a pinch of salt, in a small bowl and 1/4 cup of powdered sugar. Mix well. Your glaze should be fairly thick (like the glaze that comes with toaster strudels! haha) You might need to add a little more powdered sugar (I do 1 tablespoon at a time) or more lime juice until you get the right consistency. 7.) Once pop tarts are done baking, put them on a rack to cool. When they are cooled, spoon the glaze over each pop tart, add sprinkles if you want some extra flare and enjoy! * for pop tarts with pie crusts follow the directions above but use premade pie crusts instead of the puff pastry sheets (they are easier to work with if you let them thaw out for a little bit). Trim the round edges off the crusts and make 4 rectangles from each pie crust. I used the scraps too. I was able to make 4 pop tarts from the 2 pie crusts that come in one box. Bake them at 400 for 12-14 minutes or until golden brown. I hope you love these as much as we do!! If you make them, I'd love to know what you think! :) xo, Mal

  • Summer treat: easy pineapple coconut ice cream

Summer is almost here!! 😍 I'm so excited about it! I got a new ice cream maker from Walmart a few months ago, and I've been trying different recipes trying to find a really good one & I finally found one!!! I tested it on my hubby & mother in law! We all love it! Creamy, dreamy, summer in a bowl! 😄👏🏼☀️ I LOVE the Walmart ice cream maker I have! It's so easy to use and doesn't take rock salt or hours of churning like the one my mom used when I was growing up. In my ice cream maker, this ice cream only takes 35 min! (That's not counting the chilling time for the mixture, though). It also comes with a container that has to be frozen for about 24 hours before use. I always keep mine in the freezer so it's ready to use whenever I want to make some homemade ice cream! So you'll need to start this recipe the day before!! I got this recipe from another blog but ended up tweaking the recipe after making it a couple of times to get it just the way I like it! I linked the original recipe below. * I make a small commission when you shop the link on this post! Thanks so much for supporting my page! :) shop the ingredients Pineapple coconut ice cream adapted slightly from Let's Dish Recipes *watch a video of me making this ice cream here! ingredients: 3 cups fresh diced pineapple 1 can full-fat coconut milk 1 tsp coconut extract 1 tsp vanilla extract 2 T fresh lime juice 1/2 cup half & half or heavy cream 2/3 cup of sugar recipe: I used this ice cream maker *Read the instructions on your ice cream maker first! If you have the same ice cream maker as I do, you'll need to freeze the container for about 24 hours before you can use it! Mine also recommends chilling the ice cream mixture about 3 hours before as well! It really helps with the texture. Dice pineapple into cubes so it will blend up easier. Squeeze the juice from about 2 limes, or as many as it takes, until you have 2 tablespoons of lime juice. Put all of the ingredients into a blender and blend on high for several minutes. Strain the mixture to get out any fibers. This just gives the ice cream a creamier texture. (This is optional though. You can totally keep them in there if you'd like). Depending on your ice cream maker, pour the mixture into a bowl with a lid and let chill in the fridge for about 3 hours to get the best consistency. After it's chilled, pour the mixture into the frozen ice cream container and set it in your ice cream maker; attach the paddle, pop on the lid & set it to ice cream! Mine takes 35 minutes. Once done, serve in bowls and enjoy! I keep the leftovers in my freezer in a freezer-safe container. If serving from the freezer, you'll need to let it sit on the counter to thaw a bit before serving because it gets rock hard. If you make this ice cream recipe, I'd love to know what you think!! xo, Malyri

I only plan to wear it with something covering ring my booty, as you see in the pic above. I'm just not comfortable wearing something that shows my booty off that much! haha! The ribbed fabric is so really comfy! It's soft & thick. I sized up to a large for the baby bump since this dress is from the juniors section. 6. eyelet maxi dress Another piece from my Walmart collection! :) I loveee this one so much!!! It comes in a TON of plain colors without the woven texture as well! 8. set of 2 glass tumblers Only $5 for this set of 2 hobnail glasses!!! I found these in the dollar section at my local Walmart. You might be able to use the link above to order them for store pickup and to check the stores around you without having to drive around to each store. 9. floral romper This floral romper is also from my clothing collection!! :) The daisy pattern on this one is so pretty, and I love all the fun summer colors it has! This one is the same style as the linen blend romper from above, but it's a different fabric. The fabric has a cool, temperature-wise, feel to it! It's hard to explain! haha. I also sized up in this one, I'm wearing a 6 (small) in this pic. Had to size up for my growing baby bump! 10. bow back dress Last, but not least is another one of my faveeee dresses from my clothing collection. The sleeves on this dress are my absolute favorite!! It also comes in the prettiest green color! :) I sized up for the baby bump in this dress as well, I'm wearing a 6 (small) in this pic! Thank you so much for shopping my links, my Walmart clothing collection, and supporting my page this month and all months! :) Cheers to a happy June!! xo, Malyri

  • Disney movie night | The Little Mermaid

It's been WAY too long since I shared one of these!! My bestie and I started these back during covid to give us something to look forward to. I've had so much fun thinking of creative and unique ideas for each one!! This one I'm especially excited for!! The vision I had for the dessert turned out SUPER CUTE, and I'm sooooo excited about it!! :D Plus, we added some cute mermaid touches to everything that just makes me so happy!! It's also perfect timing with the live action movie that came out this week! I can't wait to see it! Alright, let's dive in. I'm beyond excited to share everything with yall and can't wait to get your feedback! *watch the video I made in conjunction with this blog post here! :) Shrimp alfredo stuffed shells: *I loosely used this recipe from Sizzling Eats as my inspo and made it my own. Ingredients: • 1 box of jumbo pasta shells for filling: • 6 oz fresh spinach • 1 bag x-small cooked, deveined, tail off shrimp, thawed (I used these) • 16 oz ricotta cheese • 8 oz cottage cheese • 1 -2 tsp italian seasoning + more for sprinkling • 1 -2 tsp garlic powder + more for sprinkling • salt & pepper to taste • mozzarella cheese • alfredo sauce (the Rao's brand is my fave) Recipe: Preheat oven to 350. Bring a large pot of salted water to a boil and add in jumbo pasta shells. Cook until al dente, about 7-8 minutes, be careful not to cook them too long or they will be too soft & hard to fill. While pasta is cooking, wilt spinach with a drizzle of olive oil in a large pan over medium heat, takes about 1-2 minutes. In a large bowl mix together wilted spinach, half the shrimp, ricotta cheese, cottage cheese, 1/4 cup of alfredo sauce, italian seasoning, garlic powder, salt & pepper to make the filling. Drain pasta shells when they are done. Pour some alfredo sauce into the bottom of an 8x8 baking dish- enough to cover the bottom, about half a cup or so. Use a spoon to fill individual pasta shells with filling, placing filled shells in the baking dish. Once first layer is done, place 1-2 shrimp in each shell, sprinkle with italian seasoning, garlic powder, and mozzarella cheese on top. Then start a 2nd layer of shells, repeating the same process and ending with sprinkling mozzarella cheese on top. Cover baking dish with foil and place dish on top of a baking sheet (in case anything bubbles over). Bake for 30-35 min until heated through. Remove foil and place dish under the broiler for 1-2 minutes until the cheese is golden brown. Tropical salad with creamy pineapple vinaigrette: *dressing recipe from Tastes Better From scratch blog Ingredients: for the dressing: • 1/2 cup diced pineapple • 1/4 cup + 2 T of unsweetened coconut milk • 2 T of greek yogurt • 1 T of olive oil • 1 1/2 tsp red wine vinegar • 1- 2 tsp of honey • pinch of salt and pepper • your favorite lettuce- I used a spring mix + baby spinach blend • 1 small can or container of mandarin oranges • 1 mango, diced • small handful of grape tomatoes cut in half Recipe: Put all of the ingredients for the dressing into a blender (I used this one) and blend for a few minutes until smooth. Cover & place in the fridge until ready to use. Wash and chop fruit & veggies. Assemble individual salads or place everything in a large bowl and serve family style. Ocean water: *recipe is from a friend Ingredients: * makes about 4-6 drinks for syrup: • 3 T sugar • 3 T water • 2 tsp coconut extract • 3-4 drops of blue food coloring • 1 2 liter of chilled sprite, or fave lemon-lime soda • edible glitter (I used this one) • nugget ice/ crunchy ice • seashell icing decorations (I used these) • I used these cups Recipe: Make a simple syrup by heating the sugar and water in a small saucepan over medium heat, stirring often until sugar has melted. Turn off the heat and set aside to cool completely. Once cooled add in coconut extract, blue food coloring, and mix well. When ready to assemble drinks, take 1 royal icing seashell and place a dot of the pink icing used to make Ariel's wedding cake dip (recipe below) on the back & stick shell to the cup. Fill cup about 2/3rds full of sprite, add in 3-4 T of blue coconut simple syrup (or to taste), about 1/8 tsp of edible glitter (optional), stir, and add nugget or crunchy ice. Do this for each drink and serve! Ariel's wedding cake dip: *I used this base cake dip recipe from Crayons & Cravings and made it my own Ingredients: for the dip: • 1 box of white cake mix • 1 9 oz tub coconut whipped topping, thawed (or regular cool whip) (I used this one) • 1 8 oz block cream cheese, softened • 1/3 cup of milk • 1 tsp coconut extract • 1 packet of pink decorating icing (I used this one) • Ariel's wedding cake topper printout, toothpick & tape (I just downloaded & printed this image) • pink icing roses (we used these & painted them pink with "magic colours edible paint in metallic pink" that we found at hobby lobby. I found a similar one here) Recipe: Pour cake mix into a microwave safe bowl. Microwave cake mix for 30 seconds at a time, stirring in between, until cake mix reaches 165 F (I used a kitchen thermometer). This kills any bacteria, as it's unsafe to eat raw flour. Put cake mix, coconut cool whip, cream cheese, milk, and coconut extract into a food processor or blender and blend until smooth, Scraping down a few times as you go. It will take several minutes to get it all incorporated. If it tastes grainy, keep blending until smooth. In a glass bowl, add in a layer of cake dip mixture, and then pipe a thick ring of pink icing around the edge of the bowl. Repeat this, mimicking the look of a tiered cake! :D I was able to make 3 layers in my bowl. Refrigerate until ready to serve. Just before serving, place wedding cake topper printout in the middle of the dip and add icing roses on each side to jazz it up even more (optional). ** To make the cake topper: print out this image- I printed mine at 45% scale on cardstock paper. Cut image out and tape a toothpick to the back. Serve with a tray of fruit. I did a rainbow of fruits to mimic the rainbow King Tritan makes after Prince Eric & Ariel's wedding! I used, strawberries, raspberries, cantaloupe, mango, pineapple. kiwi, and blackberries. You could also have vanilla wafers, or cupcake flavored goldfish for dipping- the options are endless! I was just trying to keep it a little healthier. :) Macaron clam shells: These are SUPER simple to make!! Ingredients: • Macaron cookies (I got the Great Value brand ones from walmart, they are in the frozen dessert section. You can also find them at Trader Joe's). • Pearl sprinkles (I used the large ones from these) Recipe: Place macaron cookies on counter to thaw for several minutes. Carefully lift up one half of the cookie, just enough to place a pearl sprinkle inside. Repeat on desired number of cookies. Shop the specific ingredients I used below This might be one of my fave most favorite Disney movie nights so far! If you recreate it, I would love to see, send me pics or please tag me!! xo, Mal

  • my walmart clothing collection

EEEEKKKKKK!!! I can't believe my Walmart collection is live!! Everything (minus several sizes that will be available soon- stay tuned!) is available right now on Walmart.com! It still feels surreal! I'm super excited and a tad bit nervous!! I love each of the pieces, but I'm just hoping y'all do too. This has been a once in a lifetime opportunity, and I'm just so grateful. I want to say an extra special thank you to the brand Label Rail. They are the ones who worked with me to design this collection for walmart.com. It's been nothing but a dream. They've been absolutely wonderful to work with. I still can't believe I got picked to create a collection, but a friend told me, don't question what's for you just accept it and let yourself enjoy it! I tend to be the type to belittle good things that come my way. lol. I'm working on being better about it. haha This whole experience has been a dream come true and something I'll never forget! I shared a full try on haul in my story over on Instagram last week! I saved it to a story highlight in case you missed it or want to rewatch it. I talked about each of the items and went over the sizing and things like that. I'll be doing that in this post as well. ☺️🌸🎀 My vision for this collection was all things girly with garden party vibes, all while being trendy and modest. I made sure everything had higher necklines and longer inseams. Working with the design team was so much fun. They were so sweet and really made me feel like this was MY collection. I was able to make changes to anything I wanted. I had a hard time at first because I didn't want to hurt the designer's feelings!! haha! but she kept saying, "No, you have to love it! This is yours!" :) **Sizing: Everything comes in sizes xs-2xl (4-16) ( 4 is the xs, 6-small, 8-med etc!) The sizing was made to be true to Walmart's typical sizing & fit. To me, the fit on everything is a lot like the Time & Tru line at Walmart. I'm wearing a 6, (small) in everything you see me wearing below. I sized up one for the baby bump. I'm also 26 weeks pregnant in all of these pics! Everything is definitely pregnancy friendly, which is a plus! ** NOT ALL SIZES ARE AVAILABLE JUST YET! They will be soon though!! Right now the stock is only showing up to size 12. I will update everyone on Instagram as soon as they are available so stay tuned! **The links in this post are commissionable, meaning I get a small monetary amount when items are purchased through my links. I'm planning to wear the blue to my church baby shower next month! 3. puff sleeve bow back dress: The girly details on this dress are to die for!! • my fave fruit salad

I've been making this super easy fruit salad for several years now! After the first time I made it, it became my go-to! It's so yummy and so simple to throw together. I love that it's light, refreshing, and made with only natural ingredients. It's my go-to recipe for get togethers and parties in the spring and summer. It's also really easy to duplicate if you are making it for a bigger crowd. Everyone that tries it LOVES it and always asks for the recipe! It's the honey lime dressing that really sets it off. I can't take the credit though. I found it on Pinterest years ago and have been making it ever since! :) Fruit Salad with honey lime dressing from Oh! You Cook! Blog *watch a video of me making it here ingredients: • 1 pint of strawberries • 1 pint of blueberries • 1- 1/2 lbs of green grapes • 2-3 limes (grab 3 if they are small) • 1/4 cup honey ** feel free to add more of your fave fruits! I think mango & watermelon would pair so well with the dressing!! recipe: Wash and dry all of your fruit. (This will keep your fruit salad from being watery and having too much juice in the end.) I like to pat them dry with a towel, but you can also use paper towels. Cut the off stems and chop strawberries into bite size pieces ( about 1.2 inches or so) and add them to a large bowl. Add in the washed & towel dried blueberries and grapes. Slice the limes in half and squeeze the juice out into a small bowl. You want 2-3 tablespoons of lime juice. PROMISE me you won't use bottled lime juice! It's NOT the same at all. Add in 1/4 cup of honey and whisk together until well combined. Pour the honey lime mixture over your fruit and stir it all together. Cover and set in the fridge for a couple of hours before serving to let all the flavors meld. Mix together one last time before serving since the juices like to sit at the bottom of the bowl. Serve & enjoy!! :) If you make this I would love to know what you think!! xo, Malyri

  • April best sellers

We are 5 months into 2023. What in the world?! haha!! That also means I'm super close to meeting our baby boy. 🙏🏻 We can't wait! I wanted to put together a quick blog post with the top 10 best sellers from last month! I go into detail about each item below if you wanna know more. *I make a small commission when you shop the links in this post. thanks so much for supporting my page! ☺ 1. Mickey graphic tee I wore this shirt when we stayed at Disney's resort in Hawaii- when I met Mickey, of course! I wore the Stitch version when we met Stitch too! ☺️ It fits oversized, but I still sized up. I got a small in the Mickey and an xxl in the Stitch bc it's the only size they had left. 2. $15 Stanley dupe cup SOO GOOD that it's been on the best sellers list for the past couple of months. It's such a great price point. You can get 2-3 of these for the price of one of the actual Stanleys. Did I need a new cup, no! haha! But I cleaned out my cups and gave a bunch away to friends & family! ☺️ You can find them in the camping aisle at Wally World! 3. $4 dinner bowl These are seriously so fun! I love using them because they are much more versatile than normal plates!! - especially for holding up tacos! haha we've had ours for several years now & they've held up really well! 4. BHG patio set Love this set so much! It's pretty & trendy without the crazy price of similar-looking sets! We've had ours for a year now & it's held up well. It has lightened up a bit from sitting in the FL sun, but I don't mind. I keep the cushions in our garage, so they've stayed perfectly clean! I linked everything in this pic in this post for you! 5. Beautiful by Drew chair SO GOOD!! I've been wanting a chair like this but didn't want to pay the high prices I was seeing. I currently have it in my nursery/office! It doesn't rock, but it does swivel! 6. Time & Tru graphic tee Time and Tru's $10 graphic tees just get better & better each year!! This one is so pretty! I love the design and all the colors. These fit slightly oversized, but they aren't really long enough for biker shorts unless you size up a handful of sizes. 7. Crossbody bag I love this bag so much that I bought it in 2 colors!! I have the white one & the tan version. They go with everything. I love the texture on them- I think it adds more of a trendy look. And I love that they are small but hold everything I need! 8. Sage gauze quilt I personally didn't buy this one, but so many of you have messaged or commented saying how much you love this set and how soft & great quality it is! It's such a good price point too! I love the color but really don't need a new set! haha! 9. Butterfly dress This print is so fun and pretty!! I love all the colors. It fits tts for me, I sized up one size, to a small for the bump. ☺️🦋 10. Pink tumbler Another good cup at a great price point. I couldn't pass up this pretty pink color!! It's one of my most fave shades of pink! 😍💖 Gimmie all the Barbie pink things! haha. I've been rotating it out with my purple one! That's it!! Thank you so much for shopping my links and for supporting my page!! It means more than you know. Everything I've been blessed with because of this page wouldn't have happened if it wasn't for you! ☺️💕 xo, Malyri

  • strawberry overnight oats🍓

Hello from Hawaii! Well, we aren't officially there yet. I'm typing this up on the 12 hour flight over. We will be there when you are reading this. We are going for our babymoon before baby boy gets here. I'm so excited and glad that we decided to take some time off and explore. It's been so long since we've gone anywhere and taken some time off- especially the hubby! This is one of my go to make ahead healthy breakfasts. I've been making it for several years and It's super easy to prep and be ready to go in the morning when you are running out the door or just need a quick breakfast. It's packed with protein, and low in sugar! I added all the ingredients into the MyFitnessPal app & it has 28g of protein & only 12.5g of sugar! 👏🏼 Another thing I love is that it's super easy to switch up the flavors! I've made this with lemon and blueberries before and it's super yummy! I just added in a squeeze of lemon juice to the oats and then topped it with frozen wild blueberries (my preference). You could obviously use fresh blueberries or any other fruit you prefer. 🫐🍋 WAIT...I just thought of a new flavor combo!! COCONUT PINEAPPLE...YUM. okay totally making that version when we get back home. haha 😍🥥🍍 I started making this recipe several years ago when I was in college. I would always take it to my first morning class & the girls next to me would always ask what I was eating and talk about how yummy it smelled. It totally has a strawberry cheesecake/shortcake smell to it between the Greek yogurt, vanilla protein powder & fresh strawberries. 🤤🍰 Strawberry overnight oats serving size: 1 adapted from: https://kristineskitchenblog.com watch a video me making these here ingredients: 1/2 cup old-fashioned oats 1 scoop vanilla protein powder 3/4 cup milk (whatever kind you prefer) 1/3 cup Greek yogurt splash of vanilla extract 1 tsp chia seeds 1 T sliced almonds 1/2 - 1 cup sliced strawberries (I like strawberries with every bite) *optional: 1 teaspoon pure maple syrup or sweetener or choice (added in when prepping) I used to add this in, but I find it's sweet enough without it, so I started leaving it out to cut down on the sugar. recipe: Mix all of your dry ingredients together in a small container that has a lid. Add in the wet ingredients and mix well. Put the lid on it and stick it in the fridge overnight. In the morning, cut up some fresh strawberries & put them on top and dig in! That's literally it! So simple & so yummy! **I like to meal prep and make 2-3 of these at a time! xo, Malyri

  • taco night- my FAVE recipe

Finally sharing this highly requested taco recipe on my blog! I've been perfecting my taco game over the past few years. For a while there, I was making these every Tuesday night. #tacotuesday They are perfect when you need a quick dinner idea and the recipe is easy to double or triple for a crowd. Over the years, I've figured out a few things that really take these tacos to the next level. Namely, the charred corn & cojita cheese! I'm seriously so proud of how yummy these are! haha it's one of the few recipes I feel really confident about making! ( you know, the safe, go-to recipe you pull out when you are having new people over) haha! I made them for a bible study a couple weeks ago & everyone loved it! Friends and family will be impressed since these seem more over the top than your average taco! ☺️🙌🏼🌮 My fave taco recipe serves: 4-6 watch a video of me making these here :) Ingredients: I linked the ingredients here • 1.5 lbs ground turkey (or beef) • 1 package taco seasoning (the Siete brand is my fave & the Trader Joes brand is also a good one, but it's a bit spicier) • 1 can of corn, drained • soft shell tortillas (I love using uncooked white street corn tortillas! I find them in the refrigerated section at Walmart) toppings: • guacamole (Publix brand is the best imo) • grape or cherry tomatoes (diced) • 1/4 cup cilantro (chopped) • cojita cheese • angel hair coleslaw • 1 lime, quartered • & any other taco toppings you like! Directions: Heat a cast iron skillet over high heat. Once hot, drizzle with avocado oil & add the drained can of corn. Turn heat down to medium-high, season with salt & pepper and mix well. Make sure the corn is in an even layer & then cook for several minutes without stirring to allow the corn to char a bit on one side. Mix corn around again and allow to cook more to char the other sides. If corn starts to pop, turn heat down a little more. Once corn is done you can turn off the heat and set it aside with the other toppings. While corn is cooking, heat up a skillet & brown your meat. Drain if necessary and add taco seasoning according to package. Once done, turn off heat & set aside. While the meat and corn are cooking, dice the tomatoes, chop the cilantro, and prepare any other toppings. Heat up another large skillet and start cooking your tortillas. (Skip this step if using regular pre cooked tortillas). I like to heat up the tortillas in a skillet, even if they are already cooked. :) You can also heat them up in the microwave for a few seconds or serve at room temp. I like to set up everything as a taco bar so everyone can make their own tacos! And that's it!! So easy! So yummy! I hope you love these as much as we do! xo, Malyri
