    I hope the new year is treating you well so far! :) I'm excited to be rounding up all of my finds from this week. There are sooo many new things coming out in stores I'm having a hard time keeping up!! :D As always, I've put the links below each picture and there is a "quick shop" of links directly below if you don't want to scroll through this post! I bought 5 of the 8 colors! haha!! But they are THAT GOOD. They are tunic length, so they are perfect to wear with leggings. They are an oversized fit but I still sized up to a small for more length. SHOP I've been waiting for these velvet biker shorts to be available in stores & online and they finally are!! THEY ARE SOO SOFT and comfy!!! I'm in love with them! haha. They are true to size. I got a small- they are a tad tight but a medium would've been too big. They do have some stretch in them. I got a small in the "brami" as well. SHOP Target has been rolling out their Spring and Valentine's decor!! When stores start putting out their Valentine's Day stuff, that's my favorite time to shop! Pink and stuff with hearts on it are my fave! :D SHOP This new $13vdoormat is soooo cute!!!!! So perfect for Spring! I'm ready to put away all my Christmas/winter decor and start decorating for Spring but it feels WAY too early! haha! I linked all the new doormats I could find below. SHOP My 13th wedding anniversary was this week and my hubby sent me over 2 dozen roses and a box of chocolates. He's such a sweetie. I shared some blurry pics from our wedding in my post on Instagram :) This heart sweater is from Amazon, it's oversized and I'm wearing a small. These boots are from Walmart. I spurged on them for Christmas. I'm wearing an 8.5 and I'm normally and 8-8.5 SHOP New Hearth and Hand Valentine's Day mug!! SHOP Target has been rolling out the cutest stuff!! I'm going to go broke! haha!! SHOP I shared a Target haul on Instagram this week and here is everything I shared!! SHOP These new Walmart sports bras are $10 and sooo good!!!! These are next level Walmart quality! They are really soft material and comfortable. They also have removable pads. I got a small and they fit perfectly. I originally bought the purple one and loved it so much that I bought the blue leopard print one too! SHOP Pretty workout gear at Target!!!! I came home with the peachy, pink one with the sun moon & stars on it! It's the first yoga mat I've ever bought! It makes such a difference when I'm working out at home! SHOP Loving this new $8 top from Walmart! I would size up at least one size. I'm wearing a large. I got a large because it was the only size left in the store that would fit me! These new Time and Tru leopard print sneakers are comfy! I got an 8 and they fit perfect! I'm normally an 8-8.5. SHOP The new workout gear at Walmart right now is so good!!! So many pretty colors and they have definitely upped the quality!! I got a small in this sports bra and it fits perfectly. It is soft and comfy too! I wore it all day yesterday. These leggings run a little big in my opinion. I got a small. They fit well, they are a little baggy in the waist but I just tightened the adjustable string in the waist and it helped. These new sneakers are comfy too! I got an 8.5 & they come in several colors! SHOP I wasn't sure about this jumpsuit when I ordered it but I LOVE IT! It feels soo good on! It's soft and super comfortable. :D I wore it for 2 days in a row! haha! I got a small. SHOP So many new things at Target right now!! I think the heart-shaped leopard print set is so adorable!! And I really love the pink graphic tee with the butterflies and flowers on it! SHOP HOW ADORABLE ARE THESE?! I finally found the joggers in store tonight and they are SO SOFT! Like seriously the softest Walmart pajamas I have ever put on. I'm super excited for this set to come in the mail! I ordered the plant print! It's just TOO cute!!! They are true to size. SHOP New Disney merch at Walmart! I can't wait to wear the gray Mickey sweatshirt to Disney World!! It runs true to size! SHOP The Time and Tru best selling $10 dressing are back in new colors for spring!! I ordered the blue striped one but I had such a hard time picking!! I really like the pink and the mint green ones! SHOP SOO excited for this shirt to come in the mail! I have a feeling I'm going to want all of the colors! haha!! I ordered a small. I'm assuming they will fit a little oversize. SHOP These are cute!! I ordered the blue one! I got a size small. SHOP I love this top more than I thought I would! It's soft and super cute on. I got the terracotta one in a size small! SHOP Weekend outfit!! Here's the previous top on. I'm wearing a small. I'm also really loving these new Time and Tru sneakers. They have a pop of gold on the heel! :D I got an 8.5 and they fit perfect! I wore them shopping around all day today and they were comfortable and didn't hurt my feet at all! SHOP I totally spend a good chunk of my savings on the new patio furniture at Target!! :D WOW!! I'm amazed!! It's all so pretty!!!! I ended up ordering the canopy patio chair and the coffee table pictured above! I'll definitely be sharing pictures when they come in! SHOP WALMART!!!! :D WOW!! I want all of these!!! The pink egg chair is a kids egg chair! If I had a daughter I would totally buy one for her! And can we talk about that palm leaf rug!! Soooo pretty!!! And those white Parisian bistro chairs!! They are only $100 for the set!! That's a great deal compared to all other stores that sell similar ones! Walmart's killing it as usual! SHOP I talked about this on Instagram, but I had a dream that my hubby showed up at our door with a box of pizza in hand! haha! :D Clearly I miss my hubby and I wanted some pizza! :P I took it as a sign and ordered pizza tonight! haha! This is the same outfit from above. I linked some similar jeans since I had several questions about them.   • ✨Free Weekly Planner Printable!

    HAPPY NEW YEAR!!! 2021! I'm soooo excited to be sharing these weekly planner pages with yall!! I don't know about you but I'm a sucker for free printables!!! Especially planning ones! :D I really wanted to create something for you that would help you stay organized, focused, and healthy! I came up with 4 different designs to hopefully have something for everyone! The weekly planner page has a space to write out your to-do list, top 3 priorities, a week layout to write down specifics for each day, and healthy habit trackers! I have a planner similar to this one that I found on Amazon. It's been my most used planner pad but I wanted to create one that was more of what I try to focus on each week. Plus I need more spaces to write on my to-do list each week! haha How to use the habit tracker: The idea behind the habit tracker is that it will help you create positive healthy habits. Making small changes is the best way to make lasting changes! Seriously!! Below I've listed out the daily recommendations for fruits, veggies, and water but I want you to start small if the recommendations feel overwhelming. If you don't eat any fruits or veggies currently, then start with one! If you eat/do more than you used to then you can fill in a bubble for that day on all of the habit trackers! If you already eat fruits and veggies, I want to challenge you to eat more and to change it up!! Variety is key so that you are getting a multitude of vitamins and minerals. As a side note, I used to be ashamed of small victories, but I've since learned that small victories lead to big ones. Be proud of yourself for any amount of improvement. Beating yourself up will only make you backtrack. Since I've started focusing on being more positive I've noticed it's been easier to stay on track. And when I do get off track rather than beating myself up for not being perfect I just begin again! Start over as many times as you need to. THAT'S how you create change! Change is NEVER about perfection. It's about getting back up and continuing the race because you will never be perfect. Once you can ignore the inner critic and keep going, you will succeed! To sum all of that up, make an attainable goal for yourself for each item on the habit tracker. Each day that you reach that goal- or at least do more than you normally would, CELEBRATE that and fill in the bubble! Don't beat yourself up for making small changes, they add up and they can boost your confidence and encourage you to make bigger changes if you let them. ♡ Fruits: 2 cups of fruit each day is the daily recommendation! I've linked a helpful resource for fruits here if you'd like some more info. It's simple and easy to use! It tells you portion sizes too. *My tip: I like to get a good portion of my fruits in by making a smoothie in the morning! Veggies: 2 1/2 -3 cups is the recommended daily intake of veggies! Frozen, raw, canned and cooked veggies all count! Just go for low/no sodium added of you buy canned. Frozen veggies are my favorite! They are picked at their peak and frozen. Check out this simple and easy to read resource on veggies here. It's just like the one I shared above but all about veggies. *My tip: I do my best to have a veggie with every meal. I even add spinach to my smoothie in the morning. You should try it! I promise you can't taste it! Hydrate: The latest from the Mayo Clinic recommends women drink 11.5 cups of water a day. If you are like me and always drinking out of a water bottle, that's 92 ounces. That's equivalent to refilling my 26 oz Tal water bottle 3.5 times! Other drinks count for hydrating your body as well. Just make sure to limit sugary drinks and make a goal to drink more water than any other drink throughout the day. * My tip: I carry a water bottle with me at all times. These are my favorite water bottles. Move: Make a point to move every day! And by moving I mean, walking, running, exercising, dancing, taking the stairs, parking at the back of the parking lot next time you go shopping, etc!! Just move more! What has helped me to start exercising more is thinking about it in terms of time. I know that I can walk Gunner for 1 mile in about 15 minutes. Thinking about how little time that is in comparison to my whole day helps me get up and get moving! Gratitude: Focusing on being grateful really helps me feel less anxious and worried. It especially helps when my inner critic is trying to make me feel unworthy and less than. I found a gratitude journal at TJMaxx not too long ago and I try to write in it every day. It's helped me be able to clear out the negative thoughts, focus, and feel more inspired and motivated. I truly believe being in a state of gratitude can do wonders for your mental health. The bible even talks about it in 1 Thess. 5: 16-18 "Rejoice always. Pray continually.     Hey friends!! I cannot believe Christmas is next week! I’m excited and feeling like I need to cram in all the festivities that I can this week! 😃🎄🎁 I’m also excited because I'm finally feeling like I’m in a good flow of being productive, working out, and eating healthy! I feel sooo much less stressed out when I’m in a good routine. Soo all of that to say- I’m going to start doing a weekly round up on my blog each Sunday/Monday! I turn them on every night while I wind down for bed. They make me so happy and the remote control is perfect because I don't have to get out of bed to turn them off!     Hiii friends!! I hope this finds you well! I'm excited to be partnering with Walmart and sharing a couple of cozy outfits with yall! I've been living in cozy outfits while I've been decorating, watching Christmas movies, and getting my holiday shopping done! Walmart Fashion pieces have been consistently my top faves this year! I wear this cardigan around the house when I'm out & about. This pink long sleeve men's tee is SO GOOD!! Don't judge me if you see me wearing it several days in a row! lol!! Seriously though! It's soft, comfy, and has that "favorite old t-shirt" feel to it. I sized up to a medium in the tee for an oversized fit so I can wear it with leggings. It comes in several colors too! SHOP the look: These are my favorite slippers for working around the house! They are comfy, cozy, and have a rubber sole. When I put these on they help me get into work mode because they feel more like wearing actual shoes rather than slippers.   • ✨Magical Christmas at Gaylord Palms

    The Gaylord Palms Resort in Orlando, FL was so kind as to invite me to the VIP premiere of their Christmas at Gaylord Palms event! YA’LL it was such a MAGICAL experience!! Like WOW!!! We had the BEST time walking through scenes from our favorite Christmas movies, dancing around in the snow, sliding down a snow mountain, making snowballs & having a snowball throwing competition, drinking creamy hot cocoa, Starbucks holiday lattes, making a gingerbread house, and eating warm Cinnabon cinnamon rolls, etc etc!! 🤩 They thought of EVERYTHING to make your getaway truly feel like you are in a Christmas movie! ✨ It's EVERYTHING magical that you love about Christmas in one place! ✨ OUTFIT LINKS: jacket, beanie, scarf & hiker boots ✨WATCH✨ this fun little video I created with some highlights from our magical stay! **Thank you so much to Gaylord Palms for sponsoring this post & hosting me and a few friends for the weekend! Details of our stay: I packed several warm jackets and sweaters! It’s not freezing in the exhibits like the ICE! Exhibit from previous years but I’m definitely glad I brought some cozy outfits. They keep it cool but we LOVED it! It really adds to the ambiance! We checked in on a Thursday afternoon and checked out Saturday morning. Our room was an atrium view with a balcony. We went to the premiere of all the activities on Thursday evening and watched the #LIT and Cirque Dreams Unwrapped shows! Friday we had the whole day to do activities! We got up and went to the Starbucks downstairs, got holiday lattes and breakfast sandwiches. We did the I LOVE CHRISTMAS MOVIES exhibit a couple of times throughout the day, built a gingerbread house, did the snowball build & blast a couple of times, the Grinch Scavenger Hunt, wandered around the gift shop in Alpine Village, sat in the hot tub for a bit and ended the night by attended The Greatest Story musical stage show! Saturday morning we woke up, got Starbucks again & then went and got Cinnabon cinnamon rolls in the Alpine Village before we checked out! Answering your questions from IG: The most asked question on IG was about the ICE! Exhibit that they normally have. The I LOVE CHRISTMAS MOVIES walkthrough is this year's version of that, without the ice and freezing temperatures. On their website, it says that they will be bringing back ICE in 2021 though. :) I also got a couple of questions about how social distancing works. They have several safety measures in place. You sign up for time slots for the events and activities rather than having to wait in line. They also have social distancing markers on floors and masks are required. This FAQ page on their website answers more questions you may have. Activities & Shows: You have to do the I LOVE CHRISTMAS MOVIES walk-through exhibit!! You literally walk through popular Christmas movie scenes! Elf, A Christmas Story, The Polar Express, A Year Without a Santa Claus, and National Lampoon’s Christmas Vacation. I don’t want to give away any spoilers because I think not knowing exactly what to expect made it super magical the first time we walked through! It's a multisensory, interactive experience that will make you feel like a little kid again! It’s SO fun and SO magical!!! And you have to get hot chocolate afterward!! It’s soooo delicious and super creamy!! OUTFIT LINKS: Sherpa denim jacket One of our favorite activities was the Snowball Build & Blast! They give you 2 tubs of ice and you make your own snowballs & throw them to try and earn points before time runs out! We decided to play against each other and had the best time! We ended up doing it a second time for a rematch! They also have 2 real ice mountains in the Snow Factory area that you can slide down on! It was so much fun! Ice slide The Gingerbread Decorating Corner was a lot of fun!! They give you a pre-built gingerbread kit with everything you need! They even had the cutest gingerbread man that was dancing around and interacting with everyone! We got a cute picture with him. OUTFIT LINKS: Sherpa denim jacket, leggings & necklace We also did The Grinch’s Wonderful Awful Idea Scavenger Hunt that takes you around the resort! It was cute and a lot of fun, even for us! :) One of the most magical parts was that our room had a view of their gorgeous atrium and we could see the massive Christmas tree all lit up from our balcony! Oh and they even have the Hallmark Channel in the rooms!! We had the BEST time!!! And one of the biggest things to me writing this blog post is that I loved it SO much that I would totally go again and spend my own money on a trip!!     I feel ashamed to admit that I'm new to the Hallmark Christmas movie game! Haha!! So shared a poll on my story last night asking for y'alls favorite Hallmark movies!! I think some of these are not Hallmark movies but they have the same feel-good vibe to them! Several of you asked for me to share the recommendations so I made this cute little graphic with all of them! I don't have cable tv, but I did subscribe to the "Hallmark Movies Now" channel on Amazon Prime. I'm not sure if most of these are on there or not. What I've been doing is just Googling the title of the movie & it will show you where you can watch the movie online!   • Asheville, NC Travel Guide

    The Hubby and I just got back from a long weekend in the mountains! It was so peaceful and absolutely beautiful! The more weekend trips we take close to home the more I'm reminded that you don't have to go far to find breathtaking scenery! :D In this travel guide, I'm going to share all the things we did on our little getaway! Please feel free to send me your recommendations that I didnt mention here! WHERE WE STAYED: We rented a little cabin about 30 min south of Asheville. It was a great price for the area and had everything we needed! The cabin had a fireplace and wood available for use! We made a fire most nights we were there. We stopped at a local grocery store and grabbed some hot cocoa to make the evenings extra cozy. The only thing I wasn't fond of was that the cabin didn't have any curtains or blinds on the windows! I was totally freaked out! lol! I think I've watched WAY too many scary movies! haha! We ended up putting a blanket over the bedroom window and I felt much better! :P The 30 min drive to town wasn't bad at all because it was such a scenic drive. (and I totally just did my make up in the car to save time in the morning! haha!) The Airbnb listing says you don't need 4WD to get up to the cabin unless there is snow/ice, but we were both glad that we took our SUV. The roads up to the cabin were steep in some areas, had switchbacks and part of it was paved and some was a dirt road but we didn't have any issues! Soo many of you recommended this place when I asked for recommendations. I loved the modern atmosphere. We sat out on the patio and had a little mountain view. They serve brunch all day which is what we were in the mood for. They also have lunch and dinner menu options. My hubby got the "old skool" breakfast bowl and I got the traditional breakfast. The potato cracklins were delicious and you HAVE to order a side of the sweet potato pancakes! OH MY WORDDD... they were SO GOOD! Ultra Coffeebar: Our waiter at Tupelo Honey said that Ultra Coffeebar is his fave coffee shop in town so we decided to stop by after breakfast. It's a tiny little coffee shop in the Arts District. We parked in the free Arts District parking lot and then walked over to Ultra Coffeebar. I ordered a yummy iced cinnamon vanilla latte and my hubby got a hazelnut one. We drank our coffee and sat down in the nice little outside area for a bit and then decided to walk around the shops and studios in the Arts District! There are some really cool artist's studios there! We really loved looking around The Lift Studios! The artist's work is super unique and cool! We had fun trying to guess what animal was in each painting. The artist, Daniel, was really friendly and even gave us a bunch of recommendations for places to eat and things to see! Buxton Hall BBQ: Daniel, the artist at The Lift Studios recommended this place so we decided to check it out. When we were there they were only taking walkup/online orders for pickup. They were not allowing anyone to dine in. When you go, I would check google maps. They tend to be pretty accurate on what dining options are available. We ordered our food inside at the counter and then took it back to our cabin. Their service was really fast! We both got the pulled pork meal and it was really good! We especially LOVED their mashed potatoes. *Early Girl Eatery: This place was our TOP FAVE of the whole trip! It was SO YUMMY!! I love that they are farm to table and big on sourcing locally. They have indoor and outdoor seating. We sat at a table right by the front window and I enjoyed watching all the people walking by with their dogs! :D  You HAVE to get the biscuit french toast!! IT'S TO DIE FOR!!! I let my hubby try a bite and he even said it was his fave meal of our whole trip despite only getting one bite! Haha! We also ordered their coffee and it was really good too! *You HAVE to order the Biscuit French Toast After you eat brunch at Early Girl Eatery, walk over to Flora! It’s the cutest plant shop! I picked up this Heart Hoya while I was there. There’s also a cool little book store next door that my hubby got a couple of used books at. *Heart Hoya I picked up at Flora plant shop The Moose Cafe: If you only go to one place on this list it HAS to be here.. well and Early Girl Eatery! Several of yall recommended this place when I asked for recommendations on Instagram!  SO GOOD!! WOW. The food, the service, and the atmosphere were amazing!! When we were there it was online order only. I ordered some doughnuts and coffee online on my phone and then we waited outside for our name to be called. We took everything to go since we were heading back home. *Hole Doughnuts: If you only go to one place on this list it HAS to be here...well and Early Girl Eatery! We took everything to go since we were heading back home. *Table outside of Hole Doughnuts with how to order and the doughnut flavors available. *Toasted almond sesame cinnamon doughnut The doughnuts were warm and insanely delicious. I’m craving one right now typing this out! We tried 3 different flavors- vanilla glaze, toasted almond sesame cinnamon, and cinnamon sugar. They were all really good but the vanilla glaze was my fave and my hubby liked the toasted almond sesame cinnamon the best! The coffee was delicious as well! Note: When we were there they closed at 1 pm! PLACES WE SAW: There is SO much to see and do while you are in Asheville, which can feel overwhelming! I decided to keep our trip simple and only have a couple of places on my list. Most travel guides and reviews I read all said that the Biltmore Mansion is a must-see. I had originally planned for us to visit it, but when I saw that it was $80 per person it changed my mind and we decided not to go. Maybe around Christmas time, I would pay that much. I’ve never been so I’m not saying don’t go, I’m just saying we weren't down to pay that much money to walk around a cool mansion. Plus, I wanted this trip to be more on a budget and more about spending time in nature. :) Blue Ridge Parkway (Northbound): Driving the parkway is a MUST DO for scenic views and hiking! It’s FREE and it’s absolutely beautiful!! We drove the parkway on both of our full days in Asheville. On the first day, we stopped at the Blue Ridge Parkway Visitors Center and talked with one of the park rangers.  She asked us some questions and then tailored her advice for us! It was perfect! She gave us a map and a one-page handout with specific information about different stops and trails! (They had one page if you are driving southbound and another for going northbound). These were really helpful! I'd suggest stopping to get them! We drove up north the first day, about a 45 min drive from the visitors Center to Craggy Gardens. We stopped at the Folk Art Center along the way. It was neat to see all of the artwork and handiwork created by local artists. (My hubby is an art lover so this stop was more for him). When we got to Craggy Gardens we went on one of the little hikes that lead to a gazebo that had a pretty view. *Hiking at Craggy Gardens We hiked back to our car and then walked over closer to the Craggy Gardens Visitors Center and realized we had walked right past the most breathtaking view of our ENTIRE trip! Haha! *view next to the Craggy Gardens Visitors Center Blue Ridge Parkway (Southbound): On our last full day in Asheville, we headed south on the Parkway from the Blue Ridge Parkway Visitors Center as the park ranger suggested. She suggested we drive to Mt. Pisgah, which was about a 3-hour round trip drive (depending on how many stops you make and if you do a hike) from the visitors center. We started on the parkway and then realized we only had half a tank of gas and were starting to feel a little hungry after shopping that morning. So we turned around and exited the parkway to get gas and grab some food! So, I’d suggest filling up your car before you drive the parkway! There are no gas stations. There are several tunnels and tons of beautiful lookout points along the drive! Make sure you stop at Funnel Top View it's gorgeous!! The one page paper the park ranger gave us really useful for going southbound. It gave specific info about popular stops and the mile markers they were at. *Funnel Top View Along the way, we stopped at Graveyard Fields. We were told it had great hikes by that artist we met, Daniel. And the park ranger told us it was a popular stop along the parkway. We took the route to the lower falls and then decided to follow the trail to upper falls. In total, we did about 3 miles of hiking. The hike to upper falls was definitely more rugged and uphill. The trail was built up a lot though, they had several wood paths built up and trail markers. There were several muddy parts and we had to cross over a little creek hopping across rocks to get to the other side. I wouldn’t say that it was hard or super challenging by any means, but I definitely got winded and it felt like an actual hike rather than a walk in the woods. *Lower Falls at Graveyard Fields *Hiking to Upper Falls at Graveyard Fields Shops: We weren't really on any sort of schedule which was a nice change for a little vacation. So usually after we ate breakfast somewhere or got coffee we would walk around the shops in the area! There are some really cute local shops- like the plant store and the bookstore I mentioned before. * The Forage/Flora plant shop next to Early Girl Eatery where I bought the Heart Hoya! *The bookstore right next door to the plant shop! I had so much fun putting this together!! I hope you find this travel guide helpful!! I definitely want to go back to Asheville. We had so much fun and it was so beautiful!   • Disney Movie Night: Coco

    Since quarantine, we've been celebrating Taco Tuesday every week! I'm trying to throw in some fun wherever I can! :D You can make DELICIOUS tacos at home! I'm talking like so good you'll stop going out for tacos as much good. We've done it several different ways. I usually like to use ground turkey or chicken but occasionally we will do steak or ground beef. If you choose to do steak use fajita seasoning instead of taco! For our Coco movie night, we made street tacos, homemade guacamole, and virgin Pina Coladas since it's Spring Break!! We had the Pina Coladas a little after dinner, like a dessert. It was so much fun!! If you do this with your friends/family, please tag me on Insta! I would LOVE to see it! 😄 *Tacos If you get someone to help you or multitask, this dinner takes no time at all! serves 3-4 2 lbs of ground chicken, turkey or beef 1 package of taco seasoning (Trader Joe's is my fave, I also look for low sodium) 1 can of no or low sodium black beans 1/2 tsp cumin 1/4 tsp oregano ground black pepper 1 can of sweet no sodium added corn oil ground black pepper 1 package of corn tortillas. (or whatever is your fave) 1. Heat up the oven to 350 degrees. Start by browning the meat and preparing according to the instructions on your taco seasoning packet. Meanwhile, start the beans by opening the can and dumping them, juice and all, into a small saucepan set on medium-low heat. Add in a little bit of pepper, 1/2 tsp of cumin, and 1/4 tsp of oregano. Let cook until warmed through. You don't want it to start boiling, so lower the heat if needed. Once it's done turn off the heat, set it aside with a lid to keep warm. 2. To make the corn, heat up a cast-iron skillet with a drizzle of oil on medium-high heat. (You want the pan hot so some of the corn gets burn marks!) Once the skillet is hot add in your drained can of corn and cook, stirring occasionally for several minutes until there is slight charring on the corn. Season with some pepper, turn off the heat and set aside. 3. Line the tortillas on a baking sheet in a single layer and put them in the oven for about 3 minutes or so just to heat them up! 4. Set up your toppings and start assembling your tacos! *Toppings: 1 package Angel hair cabbage Limes The roasted corn The black beans 1 package of cotija cheese (it looks like grated parmesan. We found it at Walmart in the refrigerated section) Your fave salsa (my fave is from Walmart- Great Value Black bean & corn salsa) Homemade guacamole (recipe below!!) Sometimes I like to use plain Greek yogurt as a healthy alternative to sour cream *My FAVE guacamole recipe 3 ripe avocados juice from 1 1/2 limes (FRESH! No fake stuff here! It won't be the same) 1/4 cup of finely chopped fresh cilantro 1 small jalapeno de-seeded and finely chopped (this makes it so it's not spicy at all!) 1 tsp garlic powder 1/2 tsp onion powder salt and pepper to taste Mash 3 avocados in a medium-sized bowl, squeeze in the lime juice, add your garlic and onion powder, cilantro, salt, and pepper. Mix everything well. Grab a chip and taste it. Add more of each ingredient until it's to your liking! For some extra fun, make your own virgin Pina Coladas! These are sooo delicious! Over the years I've perfected the recipe! 😄🥥🍍 * Virgin Pina Coladas 1 tsp rum extract 1 1/2 cups of ice 2 cups of pineapple juice 1/2 cup of cream of coconut (find it in the alcohol aisle or make your own!) Blend everything in a blender! Taste and add more of each ingredient to your liking! Pour into glasses and enjoy! Add an umbrella for extra points! 😍 *Homemade Cream of Coconut 1 can of coconut milk 1 3/4 cups sugar Add 1 can of coconut milk and 1 3/4 cups of sugar in a saucepan on medium heat. Stir until sugar is dissolved. Transfer to a bowl and put it in the fridge to chill. Use in the Pina Colada recipe above! :D I hope you have as much fun as we did! xo, Malyri
